I supermercati nel Regno Unito e negli States sono affollati da nuove food-startup che stanno innovando (e spesso scuotendo) l’FMCG market con nuovi prodotti e una distintiva nota di stile.
Questo fenomeno è ben visibile osservando l’espansione “orizzontale” degli scaffali di ketchup, che sono passati da contenere un numero esiguo di referenze ad almeno una dozzina di varietà (da quello addolcito con sciroppo d’agave a quello piccante con l’habanero, passando dal ketchup a base di rape rosse).
Nel mondo del gelato invece succede che un’azienda come Ben and Jerry’s viene scalzata dal ruolo di best-seller dalla Halo Top, brand di Los Angeles che con soli 5 anni di attività alle spalle sta riscuotendo un grande successo, arrivando a detenere una quota del 5% del mercato del gelato americano. I pop-corn aromatizzati (Propercorn ne è un esempio) rimpiazzano le patatine, le barrette di datteri o di nocciole minacciano quelle di cioccolata, l’acqua di cocco sta invadendo gli scaffali del succo d’arancia.
Gli esempi sono tanti ma c’è un dato su tutti che dà la misura di questo cambiamento nel mercato del food: tra il 2013 ed il 2017, l’88% dei nuovi prodotti comparsi sugli scaffali degli Stati Uniti è arrivato da piccole o medie imprese. Anche i supermercati europei mostrano un trend simile.
Cos’è cambiato?
Quando arriva il momento di entrare sullo scaffale dei supermercati i piccoli produttori sono costretti ad un cambio di passo: allungare i tempi di scadenza, packaging più resistenti, tracciabilità totale della materia prima e investimenti nell’ in-store marketing, oltre che dedicare del tempo allo stalking dei buyer, i veri gatekeeper degli scaffali dei supermercati. Qui la lotta tra le piccole aziende e le multinazionali ha da sempre visto queste ultime in posizione di vantaggio. Ma ultimamente non è il solo potere di acquisto degli spazi a scaffale che decreta i vincitori di questa battaglia: sempre più spesso oggi sono gli stessi supermercati ad aver bisogno di proporre un’offerta innovativa e differenziante. Per combattere la competizione dell’online sono loro stessi ad “aprire” le porte (e gli scaffali) alle startup.
Viceversa l’innovazione non è alla portata di tutti. Sempre più spesso assistiamo ai big dell’industria alimentare investire nelle piccole startup o sviluppare partnership con esse. Quando non ci sono veri e propri acquisti milionari (come è successo nel Regno Unito al the Pukka, al cibo per neonati Ella’s Kitchen o agli snack di frutta Bear Nibbles) quello che sempre più spesso accade è che i piccoli brand riescano ad attrarre investimenti, sia da investitori istituzionali che grandi retailer, riuscendo acrescere velocemente e conquistare posizioni che fino a poco tempoprima gli erano precluse.
Che questa nuova ondata di piccole e medie imprese dell’industria del cibo possa essere un buon segnale, e un’opportunità da cogliere, anche per l’Italia? La cultura eno-gastronomica certamente non manca ed il tessuto industriale è storicamente costituito da una rete diffusa di PMI, molte delle quali (si stima il 25% delle imprese che fatturano tra i 20 ed i 50 milioni) devono affrontare il delicato tema del passaggio intergenerazionale nei prossimi anni, dando spazio agli innovatori di domani. Come innescare un bel circolo virtuoso che metta in connessione big, startup e retailers?
